I used to LOVE the SuzyHomemaker life! I had dreams of being a stay-at-home Mom, preparing elaborate meals from collected recipe books of various cultures. 🙂 And actually, I did have the opportunity to do that for a little while. But my daughters are grown now with their own families, and I’m a single woman in her 50’s (54 to be exact) who has absolutely NO desire to spend her running/crochet/writing time slaving over a hot stove. 🙂
So now, it’s all about easy preparations, with as few ingredients as possible, and preferably freeze-able for easy nuking or oven/stovetop heating later.
Bean burgers are my absolute favorite to make and freeze. I’ve made bean burgers with black beans, but making them with lentil beans is my absolute favorite. You can find the recipe for them here. But there are so many other quickie meals: Stir-fries, stuffed mushrooms and peppers, wraps, soups (blended and traditional) and crockpot goodies.
