Baby it’s coooolllllddd outside!
I can’t stress enough that this is NOT my favorite time of year for comfort! However, dipping temperatures and layered clothing do conjure up images of cozy days in my warm apartment crocheting dipping vegan chips into home-made salsa or alternating layers of vegan cheese, spinach, veggie burger crumbles, potatoes and onion-garlic-pepper flavored tomato sauce for a warm and filling casserole. So, actually this IS my favorite time of year for creating comfort calories – meat-less comfort that is.
Comfort food in the cold weather months usually revolve around eating foods that will inevitably end up on a list in our “swearing off” section when it’s time for New Year’s Resolutions. And yes, vegans also have to be careful – especially if you’re an emotional eater like me who loves creamy foods, salt and fat-laden foods like peanuts, and with whom portion-control is a struggle when indulging in both.
But who says comfort food has to ruin our warm weather weight loss and eating right progress? After all, don’t weight watchers deserve love too?
